PM Edition of the Hotness

Many of us want this week to fly because this Sunday is the Superbowl. I am one of those people wishing this week away. In addition to the Steelers playing in the Superbowl, the Pens also take on the Caps this Sunday too. So...basically you know where Pam101 will be all day...my couch.

Loved my latest book!

I loved this book. A great story about the friendship and love of Patti Smith and Robert Mapplethrope. In addition to loving the way Patti tells a story, I loved learning about NYC in the late 60's/early 70's. Oh...to be a fly on the wall.

Just Kids by Patti Smith was a great read! Add it to your book list!

Ingredients:
* 8 skinless chicken thighs
* 1 tbsp vinegar
* 1/2 packet sazon
* about 1/2 tsp adobo powder
* about 1/2 garlic powder
* 2 tsp olive oil
* 1/2 onion
* 1/4 cup cilantro
* 3 cloves garlic
* 5 scallions
* 2 tbsp bell pepper
* 1 tomato, diced
* 1 tsp olive oil
* 2 1/2 cups enriched long grain rice
* 4 cups water
* 1 chicken bouillon
* 1 packet Sazon Tropical (or Goya)
* salt

Directions:
Season chicken with vinegar, sazon, adobo and garlic powder and let it sit 10 minutes. Heat a large deep heavy skillet on medium, add oil when hot. Add chicken and brown 5 minutes on each side. Remove and set aside.

Place onion, cilantro, garlic, scallions and pepper in mini food processor. Add 1 tsp olive oil to the skillet and sauté on medium-low until soft, about 3 minutes. Add tomato, cook another minute. Add rice, mix well and cook another minute. Add water, bouillon (be sure it dissolves well) and sazon, scraping up any browned bits from the bottom of the pot. Taste for salt, should taste salty enough to suit your taste, add more as needed.

Add chicken and nestle into rice, bring to a boil. Simmer on medium-low until most of the water evaporates and you see the liquid bubbling at the top of the rice line, then reduce heat to low heat and cover. Make sure the lid has a good seal, no steam should escape (You could place a piece of tin foil in between the lid and the pot if steam escapes).

Cook 20 minutes without opening the lid. Shut heat off and let it sit with the lid on an additional 10 minutes (don't peak!!!) Fluff with a fork and eat!

I was checking out at the grocery store this past weekend and this book caught me eye :) I didn't buy it...but I thought about it. Great book for the little Steeler fan in your life.

2 Sentence Movie Review



Big Brother and I were flipping through some channels on Saturday night and he came across Rambo 4. Or as he called it "AN AWESOME MOVIE"!!
Ugh...I sat there and complained until he talked trash about Twilight so I shut my mouth and sat through pretty much the worst movie ever. But at least I got to hang out with Big Bro.

1. Stallone is looking crazy old.
2. This movie sucked.

Turkey Taco Salad

Thanks, Everyday Food

You can substitute ground beef for the ground turkey. To make a vegetarian salad, leave out the meat and add your favorite canned beans in step two instead.

Ingredients:
* 4 tablespoons olive oil
* 1 small onion, diced
* 1 pound ground turkey
* 1 small zucchini, diced
* 1 red bell pepper, ribs and seeds removed, diced
* 1 1/2 cups prepared green salsa
* Coarse salt and ground pepper
* 2 heads Boston lettuce, leaves separated
* 1 1/2 cups crushed tortilla chips
* 1 cup small cherry tomatoes, halved
* 1 cup (about 4 ounces) shredded cheese, such as white cheddar or Monterey Jack

Directions:

1. Heat 2 tablespoons oil in a large skillet over medium-high heat. Add onion, and cook, stirring often, until translucent, 5 to 7 minutes. Add turkey; cook, stirring often, until starting to brown, 5 to 7 minutes.
2. Add zucchini, bell pepper, and 1 cup salsa; cook until vegetables are crisp-tender, 5 to 6 minutes. Season with salt and ground pepper. Transfer to a plate, and let cool.
3. In a large bowl, toss lettuce with tortilla chips, tomatoes, and remaining 1/2 cup salsa and 2 tablespoons oil. Transfer to serving plates, and top with turkey mixture and cheese.

If there's one guy who can play a worse boss than Steve Carell, it's Will Ferrell -- and the movie star is set to do just that.


Carell's Emmy-winning time on 'The Office' is winding down, and the show has been waiting to reveal his replacement at Dunder Mifflin. Ferrell will play a branch manager that comes in as Carell's Michael Scott begins leaving, and will take over for at least one episode.

Last night's snow storm (and 2 hour delay) was the perfect time to watch The Other Guys.

1. Lots of eye candy in this movie: Mark Wahlberg, The Rock, Eva Mendes and Will Ferrell (not hot but super adorable).
2. Plot a little lame but some really funny moments...especially those involving Eva Mendes.

I get an early dismissal today. Apparently Mother Nature is getting ready to pack a punch on the east coast. Pam101 is outta here at 3:00. I have a date with Oprah.

So...word in Celebrityville (or Star magazine...one very trashy tabloid) is that Jennifer Aniston is adopting. If it is true...Let the Angelina comparisons begin.

But the last time I posted something Star was reporting...it got shot down the same day. We will see if Hilary Duff is showing a baby bump in a few months...

Chicken Paprikash

This classic Hungarian dish will fill you up and keep you warm on a chilly fall night. A healthy dose of paprika gives this dish its deep brick-red color. If you enjoy spicy food, try replacing half of the sweet paprika with hot Hungarian paprika.

Ingredients:
* 4 chicken leg quarters, cut in half at joint (about 3 pounds total)
* Coarse salt and ground pepper
* 2 teaspoons vegetable oil
* 1 large yellow onion, halved and thinly sliced lengthwise
* 3 garlic cloves, roughly chopped
* 2 tablespoons sweet paprika
* 3 tablespoons all-purpose flour
* 1 3/4 cups low-sodium chicken broth
* 1 can (14 ounces) diced tomatoes
* 1/2 pound wide egg noodles
* 1/2 cup sour cream or thick plain yogurt

Directions:
1. Season chicken with salt and pepper. In a large Dutch oven or heavy pot, heat oil over high. Cook chicken, skin side down, until golden and crisp, 6 minutes. Flip chicken and cook until browned, 6 minutes more. Transfer to a plate.
2. Discard all but 1 tablespoon fat from pot and reduce heat to medium. Add onion and cook, stirring frequently and scraping up any browned bits with a wooden spoon, until beginning to soften, 2 minutes. Add garlic and cook, stirring frequently, 3 minutes. Add paprika and flour, season with salt and pepper, and stir constantly until paprika is fragrant and mixture begins to stick, 1 minute. Add broth and whisk until smooth. Add tomatoes and bring to a boil over high. Return chicken to pot in a single layer, skin side up, and reduce heat to medium. Cover and cook until chicken is cooked through, 20 minutes.
3. Meanwhile, in a large pot of boiling salted water, cook noodles according to package instructions. Drain noodles and divide among four bowls. Top with chicken. Stir sour cream into sauce, then ladle over chicken and noodles.
