The countdown is about to begin....

Starting tomorrow we will enter Pam101's Birthday countdown. Pam101 will be ...gulp...30 on March 26th. She has decided to celebrate something everyday. It doesn't have to be big celebrations just something. Something to celebrate how great this month is and hopefully how great 30 will be. Ireland is around the corner...and then the Birthday festivities (Boo has been busy planning the party...)! It is going to be a good month you crazy Pam101 fans!

An unexpected surprise
Pam101 met up with Cams this afternoon (after we both saw movies...Pam101 checked out and loved Valentine's Day and Cams saw Avatar). After Five Guys we decided to head towards Macy's and H&M. Pam101 went to Macy's...Cams H&M. Pam101 had no luck but did pop into Payless Shoes. Holy unexpected Surprises waited for her in there! Who knew that former Project Runway Winner Christian Siriano had a shoe line there! Pam101 picked up a pair of his fantastic heels (fair right pair in photo)...and then also picked up two pairs of designer Lela Rose's line. Who knew that Payless would be such a home-run!

The International Olympic Committee will investigate the actions of Canadian women's hockey players who celebrated their gold medal victory Thursday night by swigging beer and smoking cigars on the ice in Vancouver.
A number of players, including 18-year-old superstar Marie-Philip Poulin, were drinking alcohol on the ice following the team's 2-0 defeat of the United States. (The legal drinking age in British Columbia is 19.) Players lingered for more than 70 minutes after the awards ceremony reveling in the arena, which was empty except for media and arena staff. (Click here to view a slideshow of the celebration.)
Gilbert Felli, the IOC's executive director of the Olympic Games, said that drinking in public was "not what we want to see" from athletes at an Olympic venue. The organization will investigate the actions and will speak with the international hockey federation and Canadian Olympic Committee and ask them to "act accordingly."
A night with friends...Pam101 style

Making homemade applesauce for Cams and Anne...only to learn that Anne doesn't like applesauce. Well....whoops!

This is the urban way of cooling cakes. Set them in you bar enclosed kitchen window. Worked like a charm!

Anne!! Pam101 baked a cake for Anne to celebrate her new job. Anne was so excited to eat the cake that she cut pieces for herself and Cams but forgot Pam101...Sigh....No worries...Pam101 made her feel bad about it.

Pebble-Filled Tray
Make a boot tray by the door even better: Fill it with stones (found at garden centers). Ice and snow will melt and drain through the rocks to the bottom of the tray, so your boots won't stand in a puddle. Most of the moisture will evaporate, but you should clean out the tray regularly.

AM Edition of the Hotness

Our AM Hotness is South Korea's Gold Winner Kim Yu-na. She won the gold and set a world record. Here is a little blurb Pam101 found on her performance:
The South Korean soared to the Olympic gold medal Thursday night, scoring 228.56 points and shattering her previous world record by more than 18 points. It is South Korea's first medal at the Winter Olympics in a sport other than speedskating, and it's sure to set off wild celebrations from Seoul to Pyeongchang.

PM Edition of the Hotness

One of my favorite people in the whole world once crafted a great plan. She was all worried about the boy in the aluminum balloon...we all know him as balloon boy...she said "they should just follow my plan". Her plan was brilliant. Just take some helicopters and shoot down the balloon. This brilliant person is....McHottie. And she needed proof that Pam101 did in fact hang up her master plan in Pam101's new digs. Well there it is...for all the people to see!

Nothing says "I love my friends" better than homemade applesauce

Cams and Anne are coming over this evening for dinner (and to watch Harry Potter and The Order of the Phoenix). Pam101 knew she was going to make pork chops but wasn't sure what to put with them. Then it hit me! Applesauce!
In true Pam101 fashion...here is the recipe I am using via the crazy Rachael Ray.
Ingredients
4 Golden Delicious apples, chopped
2 teaspoons lemon juice
2 ounces golden raisins, a handful
1-inch piece fresh ginger root
3 tablespoons light brown sugar
2 cups all natural apple juice or cider, plus a splash for pan sauce
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
2 tablespoons vegetable oil or olive oil, 2 turns of the pan
4 (1-inch) thick center cut boneless pork loin chops, 6 to 8 ounces each
Salt and pepper
2 tablespoons butter
Directions
Combine first 8 ingredients in a medium pot placed over medium high heat and cook until a chunky sauce forms, 10 to 12 minutes, stirring occasionally. If sauce begins to spatter as it bubbles, reduce heat back a little, but it should be allowed to reduce and form quickly. Once apples are soft and sauce forms, remove it from the heat.
Heat a large nonstick skillet over medium high heat. Add oil to the pan. Season chops on 1 side with salt and pepper. Using a pair of tongs, add chops to hot skillet seasoned side down. Season the opposite side of the chops with salt and pepper. Brown and caramelize the chops 2 minutes on each side, then reduce heat to medium and cook another 5 to 6 minutes, turning occasionally, until juices run clear. Remove chops from heat and let them rest a couple of minutes for juice to redistribute. Deglaze the pan with a splash of apple juice and 2 tablespoons of butter. Pour pan sauce over chops. Remove ginger from the sauce and top chops with generous portions of warm golden apple sauce.

Nothing like getting it on in the back seat of a cab

A 25-year-old stripper from Oregon says that she had an affair with Lost star Matthew Fox last summer. A taxi cab driver tells In Touch Weekly that the two got romantic in the backseat of his ride. The stripper says Fox didn't use protection once they got back to his place. Fox denies the accusations, but the alleged flame says she has the text messages to prove it. The actor has been married to former Italian model Margherita Ronchi for 18 years. They have two children.

Tilikum, the orca that killed a trainer at an Orlando SeaWorld Wednesday afternoon, always had a bad reputation, even before he turned on trainer Dawn Brancheau. Though trainers often swam with the seven other killer whales at SeaWorld, they were forbidden from doing so with Tilikum, the largest orca in any of the chain’s parks. The reason was that Tilikum had attacked humans before. In 1991, he and two other orcas drowned someone in front of spectators at Sealand of the Pacific, in Victoria, British Columbia. Eight years later, Tilikum was believed to have bitten the naked body of a man who had apparently crept into SeaWorld after hours and died of hypothermia in the water. And on Wednesday, one park visitor who witnessed the gruesome attack on the trainer said that the whale "thrashed her all around" after suddenly coming out of the water.

PM Edition of the Hotness

Lils and I were takling about how we wanted to travel to today's PM Hotness. So where will Pam101 be going after Ireland and before Nepal....It's...Vancouver! Pam101 needs to get up there and check that place out!
Dinner with Jackie

Jaxs is coming over to Pam101's place for our weekly dinner! Tonight Pam101 is whipping up some of Ina's scrambled eggs and asparagus! Yum-O!
Ingredients
3/4 pound fresh asparagus
Good olive oil
Kosher salt and freshly ground black pepper
1/8 cup freshly grated Parmesan
6 extra-large eggs
3 tablespoons half-and-half
1 tablespoon unsalted butter, divided
2 to 4 slices 7-grain bread
Directions
Preheat the oven to 400 degrees F.
Break off the tough ends of the asparagus and, if they're thick, peel them. Place the asparagus on a baking sheet, drizzle with olive oil, then toss to coat the asparagus completely. Spread the asparagus in a single layer and sprinkle liberally with salt and pepper. Roast the asparagus for 15 to 20 minutes, until tender but still crisp. Sprinkle with the Parmesan and return to the oven for 5 minutes, or until the cheese melts.
While the asparagus is roasting, whisk the eggs in a bowl with the half-and-half, and salt and pepper, to taste. Melt 1/2 tablespoon of butter in a large skillet. Cook the eggs on the lowest heat, stirring constantly with a wooden spoon, to the desired doneness. Remove from the heat, add the remaining 1/2 tablespoon of butter, and stir until it melts. Check for seasoning, salt and pepper, if needed, and serve with the roasted asparagus and 7-grain bread.

Lils is coming over for dinner...it's Pasta Night!

Fettucine Alfredo by Emeril
Ingredients
1 pound dried fettucine
6 tablespoons unsalted butter
1 shallot, minced
1 cup heavy cream
1 cup finely grated Parmigiano-Reggiano
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Fresh parsley, for garnish, optional
Directions
Cook the fettucine in a pot of rapidly boiling salted water until al dente. Drain in a colander, reserving 1/4 cup of the pasta cooking liquid.
While the pasta is cooking, melt the butter in a medium saucepan over medium-high heat. Add shallots and saute until tender. Add heavy cream and bring to a boil. Cook until sauce has reduced slightly, about 5 minutes. Remove from the heat.
Return the pasta to the pot it was cooked in, set over medium-high heat along with the reserved cooking liquid. Add the butter-cream mixture and half of the Parmesan and toss to combine thoroughly. Season with salt and pepper, to taste. Sprinkle with remaining Parmesan and garnish with parsley, if desired. Serve immediately.

Pam101 is flying through and LOVING the Harry Potter series. Finished The Order of the Phoenix in the wee hours last night...LOVED IT! Now I will watch the movie (Cam's...movie night Thursday?) and start book 6 today, The Half Blood Prince.

Bling...Bling....BLING

When Nicole Richie fessed up during a Monday taping of the Late Show with David Letterman (airing on Friday, February 19) that she and Joel Madden were engaged, all eyes immediately fell on the stunning sparkler on her left hand. Her bling is a handmade, round diamond ring is over four carats and is the work of celeb jeweler Neil Lane. “Nicole wanted a beautiful, special ring and wanted to be intimately involved in the design,” Lane tells PEOPLE exclusively.

First day of new job...is our PM Hotness. Give me two weeks and I will be on top of my game. Lots to learn but I will tell you what I am totally digging...my own office! And if you believe in "signs" how about this one! There was a shamrock on my computer...and Pam101 is going to Ireland! It was a good day indeed.

It's the 30th Anniversary of the Miracle on Ice. The Miracle on Ice was a medal-round men's ice hockey game during the 1980 Winter Olympics at Lake Placid, New York, on February 22. The United States team, made up of amateur and collegiate players and led by coach Herb Brooks, defeated the Soviet team, which was considered the best hockey team in the world.
Every time I hear or watch the clip above...I tear up...every time!

Lucy goes on a treasure hunt
The best niece in the whole world loves Treasure Hunts. She had Uncle Bryan and Aunt Jenny wrapped around her finger as they did about 100000 hunts.
PS- Lucy usually doesn't show off her dance moves but she did for Uncle Bryan and Aunt Jenny!
Team USA takes on Team Canada
I enjoy the Olympics...I will admit I am a bit bored with skiing. What Pam101 is super looking forward to is hockey! Team USA takes on Sidney Crosby and Team Canada tomorrow! Can't wait!
NY Times: The loser will not be eliminated but will have to play an extra game to get to the quarterfinals. As this tournament has demonstrated, the more games a team plays, the more chances that something unexpected will happen.

Florida Bound

Pam101 is Florida Bound! Taking some R&R before my new ADVENTURE starts. Because Cougie my car is still buried in snow and ice I have to catch the Super Shuttle tomorrow at 5:00am. Boo's family watched Twilight tonight. So...it was only natural that Boo texted me scene by scene of her family's thoughts. Here are some of the highlights.
1. "Dad just defended Rosalie when Sophie (boo's niece) said she was mean. Dad says "She's just telling the truth"
2. Ominous Roch Theme playing...that is what the caption says during the baseball scene (don't ask...Boo always has the captions on).

Jail Bait No More!

Pam101 is a few days late in posting this...but this might surprise some Pam101 fans...she doesn't blog 24/7.
But she did forget to put up a fun little post about the hotness that is Jacob the Werewolf...I mean Taylor Lautner. Little Tay Tay turned 18 and now all of us grown women can feel a little less creepy while we drool over his many shirtless photos!
