You asked for it! You got it! Another post from Lils!!

Lil's Soup-Making Adventure.

Yesterday I made a delicious butternut squash soup with a butternut squash from the garden of Pam101's family. Making the soup wasn't really the adventurous part, that part was the walk up 16th on Sunday carrying a bag full of gigantic vegetables (I'm pretty sure that zucchini is bigger than my arm) and stepping over branches and other debris from the crazy storm that had just ended.

Here's the recipe:
1 butternut squash
3 shallots
few tablespoons olive oil
a few cups of chopped carrots
1 container of vegetable broth
-Start by sauteing the chopped shallots in the olive oil, then just throw in everything else (clearly it's an exact science). The veggies should just barely be covered by the broth. Simmer it until everything is good and mushy. Then get out the blender and blend away until you have a nice pureed consistency. Transfer back to the pot and add some salt and pepper to taste and voila - deliciousness!

I've made this soup a gazillion times and it's so easy to tweak it to fit your mood. Feel free to add an apple or two in for a little sweetness, or at the end add some spices for heat, cinnamon or cloves can also be good. One family gathering we literally just had bottles of spices on the table so people could personalize it. Instead of make your own sundae, it was make your own butternut squash soup!!
